Step 1: Scoop & Roll Cookies into Balls

To get started, scoop the dough into 1 tablespoon-sized balls. To do this, I use aone-tablespoon sized cookie scoopand level off the top of each one.

After scooping, use your hands to roll each scoop into a ball and then place in agreasedmini muffin tin. Don't forget to spray it, or you will have a hard time removing the cookies without breaking them!

Step 2: Bake & Unwrap Reeses Cups

Bake the cookies at 350 degrees for exactly 8 minutes. This is the key to making sure the cookies aresoft. After 8 minutes, you may look at the cookies and think they look too doughy and be tempted to put them back in the oven. But trust me, take them out at 8 minutes and they will finish baking on the cooling rack.

Tip! While the cookies are baking, unwrap the miniature Reeses peanut butter cups and set them aside. Immediately after removing the cookies from the oven, press the Reeses Cups into the center of each one.

Step 3: Press in Edible Heart Sprinkles

While the cookies are cooling in the pan (after the chocolate has melted a bit), gently place a heart sprinkle in the middle. Wait until the chocolate hardens again before removing the cookie cups from the pan (you can place the pan the fridge to speed up!).

Tip! Use the tip of a spoon to gently remove & lift the cookies out of the pan.

Frequently Asked Questions

I don't have a mini muffin tin. Can I still make these?

Yes you can! Instead of baking them in a mini muffin tin, you can bake them directly on a cookie sheet. For this route, I recommend using 2 tablespoons of dough for each cookie (versus 1), so that the cookie is big enough to actually press a miniature Reeses cup into. With this, you'll likely need to bake the cookies an extra 1-2 minutes (9-10 minute total).

Where can I buy the heart sprinkles?

I got these at Michaels but you can also get them on Amazon here! They come in a mix of red & pink heart sprinkles. They measure about the size of a dime making them perfect for Valentine mini desserts!

Can I double the recipe?

Ingredients

  • 6 tablespoons unsalted butter, softened
  • ½ cup creamy peanut butter
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 1 large egg
  • ¾ teaspoons baking soda
  • 1 ¼ cups all-purpose flour

Instructions

  • In a large bowl, cream together softened unsalted butter (6 tablespoons), peanut butter (½ cup), brown sugar (½ cup), and granulated sugar (½ cup) with an electric mixer on medium speed for 30 seconds. Add in vanilla extract (½ teaspoon) and egg (1 large) and continue to mix for 10 seconds.

  • Add baking soda (¾ teaspoon) and mix on low speed for 10 seconds. Add all-purpose flour (1 ¼ cups) and continue to mix until all flour is incorporated.

  • Scoop & roll dough into 1 tablespoon sized balls and place each in a greased, mini muffin tin.

  • Bake at 350℉ for 8 minutes. Remove from oven, and immediately press one mini Reeses peanut butter cup into the center of each cookie.

  • After a few minutes, the chocolate of the peanut butter cup will start to melt. Once this happens, gently place a heart sprinkle onto the top of each one.

  • Place pan in refrigerator for 10-15 minutes to help the chocolate re-harden.

  • Allow to cool before removing from the cookies from the pan. For easy removal, use the tip of a spoon to help lift out the cookies.

  • If not serving immediately, store in an airtight container for up to 5 days or freeze for long-term storing.
