These Pumpkin 2 Ingredient Donuts Weight Watchers are the perfect light treat for the fall! It may be no surprise that even with Weight Watchers, I still enjoy baked goods. Fall is approaching, so we are getting ready for everything pumpkin again. And do I have to say more?? Doughnuts!

These differ slightly from my 2 Ingredient Muffins (see them here -> here). Since they don’t have any water, they are a bit thicker and more cake-like! The perfect way to replicate a cake donut from a bakery without all the extra calories! Either way, they taste great, and the kids also enjoy them, you would never guess they are weight watchers donuts!

WHAT IS Weight Watchers?

When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.

New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.

I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. No matter the WW plan, it works to help you learn healthy eating habits. I have hit my lifetime goal weight several times but stopped following the plan and tracking, so the weight does creep back on.

2 Ingredient Pumpkin Doughnut Recipe Ingredients:

  • Yellow Cake Mix– You can use different cake mixes for this. I loved that it wasn’t a strong pumpkin since we didn’t use a spice cake mix and used yellow cake mix instead. You will not use the water, oil, or eggs listed on the cake mix box.
  • Canned Pumpkin– I used pumpkin canned puree to make this; fresh puree may work, but I have not tried it. Also, be sure the canned pumpkin has no added ingredients that will affect the point value.

How To Make Pumpkin 2 Ingredient Donuts:

Preheat your oven to 400 Degrees

Spray your doughnut pan; I spray mine with olive oil from my Misto. Now I use my siliconedoughnut pans from when we made Keto Bagels (you can see those -> here). I love to bake in silicone, but there are also metal pans.

Combine your cake mix and pumpkin; this worked better, working it together with a spatularather than a whisk.

Now, having the batter in a piping bag to pipe into the doughnut molds makes this much easier. I stucka gallon ziplock bag into a beer stein and filled it that way. It worked out perfectly!

Cut a decent size hole into the Ziploc and pipe into the doughnut pans. You can also cut the hole larger if you think it’s too small when you get started.

Now this made 18 doughnuts for me; I started out filling not as full but ended up adding to them to make the molds fuller.

Bake for about 9-11 minutes, keeping an eye on them to raise and be done through

Now I tore one to ensure it wasn’t too doughy and thoroughly baked in the middle, but you can use the toothpick testing too. My oven gloves work best for baking with siliconepans (these are my favorite on Amazon -> here).

How to store 2 Ingredient ww donuts

Once the donuts have cooled, please place them in an air-tight container or bag and store them for five days.

Weight Watchers Points Value For 2 Ingredient Pumpkin Doughnuts

Make sure to recompute the points on your box mix, but mine came out to 78 points for the whole box and worked out to 4 points a serving on the plan starting November 2022.
